For Chicken Soup You need:
= 4.5 L Cooking Pot
= Bones with some meat of 1 Organic Chicken.
**Please, buy an Organic chicken or chicken that is Grass fed, Free range, that is raised without use of antibiotics or hormones. Otherwise, you will cook not a healing soup but a chemical liquid.
** Also, I found that Chicken Bones- in meat works better for the soup than just white chicken meat. It has more flavor and more goodness as well. Probably because the bones contain collagen and albumen and when we boil chicken bones they release gelatin that is high in amino-acid glycine. Scientific studies show that being of a non-essential amino-acid, glycine plays a very essential role for our digestive and central nervous systems health. On the other hand, chicken meat on the bones is an animal source of cysteine, that is released when we cook the soup. Cysteine is a semi-essential amino acid, precursor to the glutathione, a powerful antioxidant.
= 2 Onions-> 1 Onion for the stock and 1 Onion for the soup dressing
= 4 Bay leaves
= 1 Medium Raw Carrot
= 1 Table spoon of Grape seed or Olive oil
= 2 Medium Raw Potatoes
= 1 Handful of "Traditional German Egg Noodles" or Brown rice noodles (if you are gluten sensitive)
= Sea salt to your taste. I use "Herbamare" salt.
***First Step-> Cooking Chicken Stock***
Take=> Cooking Pot, Organic Chicken Bones with meat, 1 Onion, 2 Bay Leaves
~ Fill up a cooking pot with cold water, about 3 liters. Do not fill the pot with water up to the top. You need some room for meat, vegetables and boiling.
~ Place Chicken Bones, Bay leaves and whole Onion into the water. Add a pinch of Sea salt.
~ Bring to boil. As the liquid approaches its boiling point, reduce the heat to medium and simmer gently. Remove and discard the scum that rises while it is simmering as much as possible.
~ Simmer till Chicken is ready. About 30 minutes.
***Second Step -> prepare Soup Dressing****
You need:
= 1 Raw Carrot
= 1 Table spoon of Grape seed oil or Olive oil
~ Add Grape seed oil to a frying pan. Medium heat.
~ Chop Onion and add it to the pan
~ Chop Carrot and add it to the pan
~ Saute till ready on medium heat. Periodically stir the mixture.
~ When vegetables are translucent, they are ready. Put aside.
*** Back to the Stock. Connect all together.***
= Peel and cut on cubes 2 Raw Potatoes
= Add potatoes to the Chicken stock. Bring it to boil and cook the potatoes till it soft.
= Remove and discard cooked whole onion and Bay leaves from the stock too.
= While still simmering, mush cooked Potatoes.
= Return Chicken meat back to the stock.
= Add Fresh Bay leaves
= Add 1 hand full of "Traditional German Egg noodles" ( You can replace for Brown rice noodles instead)
= Salt to your taste. I use "Herbamare".
= Bring soup to boil again and simmer about 4 minutes, till noodles are done.
~For serving you can add parsley.
~For congestion relieve, add Cayenne(Capsicum) pepper or Horseradish or fresh Garlic and eat the soup slowly.
