You need:
= 500g of Sweet Chestnuts, roasted or cooked
= 1.5 teaspoon of Baking Soda
= 1 teaspoon of Cinnamon
= 1 teaspoon of Vanilla powder
= 1/2 cup of Coconut sugar
= 2 Table spoon of Grape seed oil
= 2 Eggs
= Pinch of salt
= 400 ml of 3,8% Milk
= Baking dish - 20cm in diameter
= 1 Table spoon of Brown rice flour (or Whole wheat flour, if you are not gluten sensitive) for dusting
***Preheat oven to 350 F or 177 C***
== 1. Make a Chestnuts Flour.
Place Chestnuts into a food processor or blender. Ground to a fine flour. Simple:)
== 2. Add Baking Soda, Vanilla, Cinnamon into the food processor. Mix.
== 3. Add Coconut sugar. Mix.
== 4. Take a mixing bowl and beat there 2 Eggs and add a pinch of Salt. Whisk eggs and salt.
== 5. Add Milk, whisk
== 6. Add 2 Tablespoon of Grape seed oil and whisk
== 7. Add Chestnuts/Spices/Sugar/Soda mixture into a liquid (Eggs,Milk,Oil) mixture in several batches every time whisk all together. The mixture has the consistency of heavy pancake batter.
== 8. Cover the baking dish with butter.
== 9. Dust with Brown rice flour
== 10. Pour the batter into the baking dish
== 11. Bake for 35-40 minutes. Check with a wooden stick if it is ready.
It is looks like a roasted Chestnut and very pleasant to the taste.
The Chestnut Cake works well with fresh soft fruits, like raspberries or strawberries and absolutely amazing with Cranberry sauce.
