Yule Log with Coconut Sugar, Chestnuts Whipping Cream and Frosting Fruits

 Festive looking, exceptionally satisfying, Yule Log is traditionally served for Christmas. This is perhaps the most glorified dessert for the Christmas tea table.
                                  You need:
  = 4 Eggs
= White soft wheat "00" Farina flour - 1 Cup ( This is the only recipe I use white wheat flour. At the same time, Soft wheat flour is still better than 'All purpose", as it has less amount of gluten-forming protein with a high amount of starch and it is better to use for light cake)
= Coconut Sugar - 120g or 8 Table spoons
= Butter, unsalted - 4 Tablespoons (1 Tablespoon per Egg is max. You can put 3 Tbsp instead of 4 Tablespoons)
= Salt, a pinch
= Cinnamon - 1 teaspoon
= Vanilla extract - 1 teaspoon
= Cacao, unsweetened - 1 Tablespoon
= Baking Cookies Sheet
~~ Preheat oven to 350F (175C) ~~
~~ Prepare baking sheet. Crease with butter and cover with Parchment paper.~~
 == Sift the flour into the mixing bowl. Add a pinch of Salt and Cinnamon. Mix. Put aside.
 == Melt the Butter and leave it to cool
 == Whisk 4 eggs and Coconut Sugar to the ribbon ( It means, when you whisk, it forms the "ribbon" like when you hold and lift the whisk. With white sugar it is easier to do, but with Coconut Sugar to make this "ribbon" is possible too). Add Vanilla Extract.
== Add and FOLD the Flour (with a pinch of salt and Cinnamon added) gradually, in 3 batches. This is a very important step. Do not just mix the flour with ingredients, but FOLD it gently and neatly.

== With a last batch of Flour add Cacao powder. Fold it into the mixture.
 == The last step. Add melted Butter and fold it gently into the mixture.

== Pour the dough into the prepared backing sheet. Spread it evenly.
== Bake for 15-20 minutes. It is ready when the edges are firm. Do not over-bake.
 == Here is a very Important trick to roll the cake ==
** When ready, cool the cake, just enough to the touch.    
** Place on the slightly dump clean towel.
**  Roll and unroll the cake along with towel several times.
** Peel off parchment paper and leave the cake on parchment paper.


== Spread evenly some portion of Chestnuts Whipping Cream Carefully roll the cake as tightly as possibly.
== Cover the cake with the rest of Chestnuts Whipping Cream Sprinkle the rolled cake with grated Chocolate and decorate with Frosting Fruits

Poultry Meat / Apple / Egg Salad

Every time when I have leftovers of white domesticated bird meat, as chicken, turkey, goose, duck, I always prepare Poultry Meat/Apple/Egg Salad. It is easy, healthy and tasty. I found that white meat is quite dry and boring to eat. You have to warm it up and the meat tastes somehow like leftover meat. If you combine this meat into another dish and cook, the meat still taste like leftover meat.
 On the other hand this salad is different. It taste great as absolutely new, fresh dish with white healthy meat that tastes neither dry nor boring.
                                 You need:
= Poultry meat - 2 or 1 and 1/2 cup (~310g)
= 1 Apple, Granny Smith
= 4 Hard boiled Eggs
= Mayonnaise - 3 Table spoon
= "Herbamare" Salt to your taste. If you do not have Herbamare, add salt and pepper to your taste.
= Blender to cut meat (You can use food processor)
= Box Grater for the apple
== If you like, you can add Onion and Cilantro as well.
*** Also, if you have more meat than I have, just add one more apple and egg, as Mayo and salt are added by your taste.
~~ Cut meat on pieces, add it to the blender and finely cut the meat with the blender.
 ~~ Chop hard boiled eggs. Add them into the mixing bowl with meat
 ~~ Peel the Apple and grate it into the mixing bowl
 ~~ Add "Herbamare" (Salt) and Mayonnaise to your taste. Mix well, decorate.
~~ Serve as a side dish or you can serve it on sandwiches. Use the whole wheat bread and different sizes of cookies cutters. Cut the shape with cookies cutters, spread the Salad between two slices of bread, decorate and serve.

Smell the Roses


Among all of the flowers in my garden one is notable as being extra special and this is the Rose.
I love Roses for their wonderful with many shades fragrance and beauty. I love to grow them.
 Every year I am looking forward for a time to see them blooming.

I think every flower has personality and character.

  Have a look at my Rose little garden.

Apothecary's Rose or Rose Gallica officinalisis (photo below) is one of the oldest roses with absolutely delightful flowers and fantastic fragrance.
Even though the roses are quite adaptable flowers, sometimes you have to be just patient  and love them and take a good care of them to see wonderful results.

From my own experience I learned that good neighbors like Thyme and Chives make the roses happy. These herbs protect the roses against spiders and unwanted insects. Needless to say that you have plenty of fresh, wonderful herbs for cooking and use them fresh.
